Santoku translates as "three virtues" or "three uses" and refers to the versatility of the knife. Santoku knifes are shorter, lighter, and thinner than western style chef's knives.

CTS-XHP is a very durable, extremely low maintenance stainless steel. It is intended to be used at 60/62HRC for specialty knives where the alloy's fine carbide distribution can be used to produce a keenly sharp cutting edge. In addition, the composition of CTS-XHP alloy has been balanced so that it can attain a minimum hardness of 60HRC when air cooled from hardening temperatures of 1,850° to 2,000°F (1,010° to 1,093°C) and is thus more forgiving during heat treatment than similar alloys. CTS-XHP resists corrosion in normal domestic environments and very mild industrial environments, including many petroleum products and organic materials.
